The last "fun Friday" snack of the month!! Caleb wanted cupcakes (red velvet and chocolate) for his class, and this time I tried a marshmallow frosting for the cupcakes. Getting a little tired of making buttercream. It turned out really good! And, I dreamt this one up all on my own. I'm trying. Really. Just combined a few of the things I knew were a staple in a good buttercream frosting (butter, vanilla, powdered sugar), but added marshmallow fluff. I think I like this one, it has a lighter not as sweet taste with less powdered sugar. Might just be the new favorite around here! And it piped onto the cupcakes perfectly thank goodness, because at 11:00 at night when your frosting doesn't work and you have no backup....you either stop at Winn-Dixie on the way to school, or you deliver cupcakes with no frosting. Not that I would know that or anything. ;) And I am officially done with "fun Friday" snacks for the month of October. Hallelujah!
