Hi-Hat Cupcakes


Tried a new recipe yesterday. And, I'll admit that anything calling for a candy thermometer can end badly in my kitchen. But, these cute little cupcakes have been something I've wanted to try for a loooong time. I volunteered to bring a dessert for the teacher's luncheon today, and figured this would be the perfect time to give them a shot. So glad I did. They were yummy! I took a bite, yep....had too. Don't tell my doctor. ;)

Found the recipe on Bakarella, who found the recipe on Martha Stewart. Hardest part for sure was the doubt that overtakes you as you are holding the hand held mixer at the 12 minute mark wondering why your marshmallow concoction hasn't reached 160 degrees. I, like Bakarella, gave up around then and hoped for the best. Piped the concoction onto the cupcakes, threw them in the freezer, and took a deep breath. Second hardest part was turning my sweet little piped specimens upside down and dunking them into the chocolate mixture. Visions of chocolate-marshmallow mush floated through my head. For my first time, it went pretty well. Figured out about half way through that I needed to thin the chocolate mixture and that made the dunking even better. The thinner the chocolate mixture, the better.

Took them into school today and snapped a quick picture of them before I walked away and prayed they would stay in their "shape" until the teacher's came to devour them. Threw my cardinal rule of always trying a new recipe first before giving them to people to the wind this time for lack of planning and time, and don't think I'll do that again. But, it's chocolate and sugar....can't taste that bad right?!?! And if you'll notice the empty cupcake spot in the top left corner of the picture.....that cupcake was taken while I ran in the secretaries office to tell her something. ;)
