Pumpkin Goodies


Caleb's class dissected and totaled A LOT of pumpkins last Friday for their math class. And, the tradition at his school is that a group of moms get to come get all those lovely, fun guts and make something "pumpkinish" with them. My day for this week was Friday, so I knew that by then all the versions of pumpkin muffins and bread would be well past their prime. Every kid in America loves donuts, so I decided to go that route. Found my recipe on Pinterest (shocker!), and I was off. And as I usually do with most recipes I've never done, I made a mistake after I noticed it making the second batch. 1 egg and 2 egg yolks is what it called for, and I did 1 egg and 2 egg whites....which is what happens when you are trying to clean-up dinner, get one kid to tennis, take care of one tummy ache, and help with homework. Threw two more yolks into the bowl and said a little donut prayer for good luck. No time for mistakes since I need each and every little donut and hole that comes out of that peanut oil.

Finished late last night, of course, and I know the first batch turned out because my taste taster told me so. He feel asleep in Caleb's bed on the second batch, so I'm hoping that is the case for the later. First time I've ever attempted the "scary-not sure what to do with this thermometer-won't they just taste like an oil bomb-what in the world am I doing" donut, and I will for sure be doing this again. Already dreaming up fun versions of this for Christmas.......while sugar plum fairies dance in my head. Literally. I'm tired.
