Cupcakes
I love baking. Cupcakes are my favorite right now, but I'm not partial to any one specific category of baking. We share the love equally. I have this totally unhealthy habit of saying yes whenever someone asks me to bake for school. I should say no more, but I love it. I have just stumbled upon actually making your icing. Yes, not in the can. Who knew you could do that?!? :) I made cupcakes from scratch for the first time EVER this week. Didn't have one Betty Crocker box in my kitchen. Yay me! And the list of ingredients wasn't a whole paragraph long with things I can't even pronounce. Since I forget what I sign-up for at school, 18 cupcakes turned into 32 and by Monday I was up to 60! I didn't realize I had promised sweets for all three kids classes. So, I dug deep.
Yes my back hurt last night when I finally crashed in bed, yes I went through more powdered sugar than one person should be allowed to buy, and yes I am just fine not looking at cupcakes for a little bit. But, when we pulled up to school and unloaded our trunk full of cupcakes to classrooms, my children were grinning from ear to ear. Even Caleb wanted to walk his cupcakes into his room and stopped to show his friends. And that is why I do it. Why I trash my kitchen whenever I can so I can get in their classrooms to spend time with them. I love that they might actually gleam one memory from all these cupcakes, cookies, and class parties I do my best to partake in. I want them to know I am on this journey with them as we march our way through grade school. That I know their teachers, librarians, principals, and they know me. We take our lives one year at a time in this house. And each year I get to do this I am ever so thankful, because I don't know what next year will hold. Someday I will re-enter the workforce, and won't be able to do all this.....and that is why I do it now. Because in those cupcakes hold memories that I pray each of my children will lovingly recall someday.
